Half Shell Oyster

Half Shell Oyster is a frozen oyster presented on its natural half shell, with the meat left attached and ready to cook. Made from Crassostrea gigas (Pacific cupped oyster) and individually quick-frozen (IQF), it delivers the plump, briny flavor of fresh oysters with zero shucking labor. Ideal for grilling, hot pot, baking, and seafood platters in restaurants, hotels, and buffet operations.

What It Is

Our half shell oysters are harvested from classified, monitored growing waters, then cleaned, opened, and frozen on the half shell within hours of catch. The meat stays firmly in the shell, preserving the authentic oyster-bar presentation while removing the hardest part of preparation for the kitchen. No additives or preservatives are used.

FAQ

What is the difference between half shell oyster and oyster meat? Half shell oyster keeps the meat attached to one shell half — it is presentation-ready and needs no shucking. Oyster meat (shucked) is loose pieces with shell fully removed. Choose half shell for grilling, plating, and oyster bars; choose meat for cooking and further processing.

What species is used? Primarily Crassostrea gigas (Pacific cupped oyster). Eastern oyster (Crassostrea virginica) and European flat oyster (Ostrea edulis) can be supplied on request. All are bivalve molluscs.

What sizes are available? Graded by shell length, e.g., S (below 8 cm), M (8–10 cm), L (10–11 cm), LL (11 cm+), or by weight class Small (50–70 g) to Extra Large (150 g+). Custom grading is available via OEM.

What is the allergen? Mollusc (shellfish). Not a fish or crustacean allergen. Label accordingly for end consumers.

Is this product ready to eat? No. It is a raw frozen seafood item and must be cooked thoroughly before consumption. Oysters carry an elevated risk of norovirus and Vibrio when undercooked; cooking is the primary risk-reduction step.
