This product is channel catfish — Ictalurus punctatus (family Ictaluridae, order Siluriformes), a farmed freshwater fish, processed as butterflied / back-opened: gutted and cut open along the backbone so the fish lies flat, then frozen. It is a scaleless catfish (not a carp, not a marine fish), and is the canonical species behind the Chinese regional brand "Qingjiang fish". The product is supplied frozen — either bone-in (back opened, flesh attached at the belly, whole dressed fish) or fully deboned as a butterfly fillet, per the buyer's requirement.

Fish are graded by weight into lines such as 600–800 g, 800–1000 g and 1000–1200 g per fish, and packed as 10 kg blocks (BQF) or IQF. The trade name "Qingjiang fish" is sometimes loosely applied to other species, so fix the Latin name Ictalurus punctatus on the purchase order and packing list, and confirm species on the health certificate, to prevent substitution.
