Uroteuthis duvaucelii (Indian squid, formerly Loligo duvaucelii) is a medium-size loliginid squid widely distributed across the Indian Ocean — from the Arabian Sea to the Bay of Bengal, Andaman Sea and waters off Southeast Asia — and is a major domestic and export resource for the regional trawl and jigging fleets. For this product the cleaned mantle is cut crosswise into rings, then pressed flat so each ring opens into a flat, even oval rather than a closed tube. The flat shape packs tightly, breads and fries evenly, and lies flat on processing trays. Rings are frozen with a 15% glaze that protects against freezer burn and dehydration during long cold-chain transit.

Q1. What is a "flat ring" and how is it different from a regular squid ring? A. A regular ring is a crosswise cut of the mantle that stays a closed tube; a flat ring is the same cut pressed open into a flat oval. The flat shape packs tighter, breads and fries more evenly, and lies flat on trays and plates. Both come from the same Uroteuthis duvaucelii mantle — specify "flat ring, pressed" on the PO so you do not receive closed-tube rings.
