Because the fish are vessel-frozen at sea, initial freshness is high, but the −18 °C chain must stay unbroken after landing — temperature abuse at any point shortens shelf life and degrades texture. Keep frozen until use; thaw under refrigeration and cook thoroughly. Do not refreeze after thawing.

Q1. "Round scad" covers many species — how do I avoid substitution? A. "Round scad" and the regional common name are umbrella terms. The commercially dominant species is Decapterus maruadsi (blue round scad), but the same trade name is also applied to other scads — Decapterus macrosoma (slender/scaled sardinella scad), Decapterus lajang (Bengal/insular scad), Atule mate (sharpnose/whitelipped jack) — and in some localities even to ladyfish (Elops spp.). These differ in size, oil content and price. Fix the Latin name Decapterus maruadsi on the purchase order and packing list to prevent substitution, and confirm the species on the health certificate.

Q2. What does "vessel-frozen" (sea-frozen) mean, and why does it matter? A. Vessel-frozen (sea-frozen) means the fish are frozen on board the catching vessel within hours of capture, before any shore-side delay. Compared with shore-frozen product (which may sit in the hold for hours or days before processing), vessel-frozen scad retains better flesh quality, lower drip loss and a longer, more stable frozen shelf life.
