Alaska Pollock Portion (Gadus chalcogrammus) — Easyseafood
Alaska Pollock Portion in this product refers to Alaska pollock Gadus chalcogrammus (syn. Theragra chalcogramma) — the dominant wild North Pacific whitefish — that has been cut into portion / section blocks (a chunk cut, not a fillet), trimmed skinless and boneless as standard, graded and frozen. It is supplied as portions (the defining form of this product), either IQF (free-flowing individual pieces) or BQF (glazed 10 kg block). "Portion / section" is a cut / form, not a species or size grade. Other traded whitefish — Pacific cod Gadus macrocephalus, Atlantic cod Gadus morhua and Atlantic pollock Pollachius virens — are distinct species and are not the default here.
What It Is
Gadus chalcogrammus is a wild-caught North Pacific gadoid whitefish and the highest-volume whitefish fishery in the world. For this product the dressed fish is filleted, then cut across or along the grain into portion blocks (typically skinless boneless), graded and frozen by IQF or BQF with an optional protective glaze. Lean, white, mild and neutral, it is a versatile input for foodservice reprocessing, battered / breaded lines, fish cakes, surimi and soup bases — a bulk-format counterpart to retail fillet packs.
Key Features
- Wild Gadus chalcogrammus — Alaska pollock, catalog default species (North Pacific)
- Portion / section cut — chunk blocks, not fillet slices
- Skinless, boneless (PBO) as standard; pinbone-out optional
- IQF (free-flowing) or BQF glazed 10 kg block
- Protective ice glaze 0–20% optional
- Lean, white, mild, low-oil whitefish
- Long frozen shelf life
Applications
- Foodservice reprocessing — portion packs, combos and ready-meal input
- Battered / breaded lines — fish fingers, nuggets, fry fillets
- Fish cakes & surimi input — fresh-frozen base distinct from industrial surimi blocks
- Soup & hot-pot bases — bulk whitefish for broths
Certifications
- MSC — applicable. Alaska pollock is wild-caught; the Bering Sea and Okhotsk Sea fisheries hold MSC certificates, so an MSC claim is legitimate when sourced from certified grounds.
- ASC / BAP / GLOBALG.A.P. — NOT applicable. These are aquaculture schemes; Alaska pollock is not farmed. Any "ASC pollock" label would be incorrect.
- HACCP / BRC / IFS / ISO 22000 — food-safety management systems
- HALAL / KOSHER — available on request
Storage & Shelf Life
Frozen at -18 °C or below. Typical shelf life 18–24 months under unbroken cold chain. Thaw under refrigeration before use; drain before cooking. Cook thoroughly; avoid repeated thawing to preserve texture. Keep glaze intact until processing to reduce dehydration.
FAQ
Q1. What species is "Alaska pollock portion"?
A. It is Gadus chalcogrammus (syn. Theragra chalcogramma), a distinct species from Pacific cod (Gadus macrocephalus), Atlantic cod (Gadus morhua) and Atlantic pollock (Pollachius virens). "Pollock" alone is ambiguous across markets; specifying the Latin name prevents substitution with lower-value whitefish.
Q2. Is it a portion or a fillet?
A. This product is portions / sections — chunk blocks cut from the fillet, not thin fillet slices. Portions are the bulk / foodservice format; fillets (e.g. bias-cut retail trays) are a different cut. State "portion / section" at order time. PBO (skinless, boneless) is standard for both.
Q3. Wild — which sustainability certification applies?
A. Because Alaska pollock is wild-caught, the relevant label is MSC (for certified fisheries). ASC / BAP / GLOBALG.A.P. do not apply — those are aquaculture standards and pollock is not farmed. If a supplier offers "ASC pollock," treat it as a mislabel. HACCP / BRC / IFS / ISO 22000 and HALAL / KOSHER are standard regardless.
Q4. What HS code applies to frozen Alaska pollock portions?
A. HS 0304.75 — "Frozen fillets of Alaska Pollock (Theragra chalcogramma)," which also covers boneless portion / section meat (other fish meat). Do not default to the generic 0304.89 ("other frozen fillets"). If the portions are bone-in sections (not filleted), the code shifts to 0303.75 (frozen Alaska pollock, not filleted). Breaded / pre-cooked portions move to Chapter 16 (1604.x).
Q5. IQF or BQF — which should I choose?
A. IQF keeps portions free-flowing for portion packs and reprocessing but costs more. BQF (glazed 10 kg block) is lower-cost for bulk foodservice and industrial use, with pieces stuck together. Both use the same PBO portion meat; choose by your downstream operation and glaze tolerance.
