Alaska Pollock Fillet Diagonal Cut Foam Tray | Frozen Seafood

Alaska Pollock Fillet, Diagonally Cut, Foam Tray, Film Wrapped is a value-added frozen whitefish product: skinless boneless fillets of Alaska pollock (Gadus chalcogrammus, formerly Theragra chalcogramma) cut on a bias (diagonal) into hot-pot-ready strips, retail-packed in a foam tray and overwrapped with cling film, then frozen.

What It Is

Alaska pollock is a wild-caught North Pacific gadoid whitefish — the highest-volume whitefish fishery in the world. In this format the fillets are trimmed skinless and boneless (PBO), sliced diagonally to increase surface area for fast, even cooking, then presented in a consumer/foodservice foam tray sealed with PVC/PE cling film. The tray pack is frozen as a unit (often after the fillets are individually quick-frozen so pieces do not glue together inside the tray). The result is a retail-ready, portion-controlled pack suited to East-Asian hot-pot and steamboat retail.

Key Features

  • Species: Alaska pollock — Gadus chalcogrammus (syn. Theragra chalcogramma); wild-caught.
  • Cut: Diagonal / bias cut fillet strips (斜切) — wider exposed face, ideal for shabu shabu, steamboat and quick pan/steam.
  • Trim: Skinless, boneless (PBO) as standard; pinbone-out optional.
  • Packaging: Foam tray (PET/PS) + cling-film overwrap (覆膜) — retail/foodservice presentation with portion control.
  • Freezing: Fillets IQF first, then trayed and master-carton frozen; film keeps portions separated and protects from freezer burn.
  • Flesh: Lean, white, mild, low oil; clean neutral flavor that carries broth and sauces well.
  • Shelf life: 18–24 months at –18 °C.

Applications

  • Shabu shabu / hot pot / steamboat — the primary use for the bias cut.
  • Steam, poach, or light pan-fry in foodservice.
  • Fish cakes / surimi-base recipes (as a fresh-frozen input, distinct from industrial surimi blocks).
  • Retail frozen aisle and Asian grocery supply.

Certifications

  • MSC — applicable. Alaska pollock is wild-caught; the Bering Sea and Okhotsk Sea fisheries hold MSC certificates, so an MSC claim is legitimate when sourced from certified grounds.
  • ASC / BAP / GLOBALG.A.P. — NOT applicable. These are aquaculture schemes; Alaska pollock is not farmed. Any "ASC pollock" label would be incorrect.
  • Baseline HACCP / BRC / IFS / ISO 22000 food-safety systems apply at the processing plant.

Storage & Handling

Store at –18 °C or below. Keep the cling film intact until use to prevent dehydration and odor transfer. Do not refreeze after thawing. Thaw under refrigeration before cooking.

FAQ

Q1. Is this Alaska pollock or just "pollock"? A. Alaska pollock is Gadus chalcogrammus (syn. Theragra chalcogramma) — a distinct species from Atlantic pollock (Pollachius virens) and from cod (Gadus morhua). Always pin the Latin name on the order to prevent species substitution, since "pollock" alone is ambiguous across markets.

Q2. Is Alaska pollock farmed? Can it carry ASC? A. No — Alaska pollock is exclusively wild-caught. Therefore MSC applies (for certified fisheries) and ASC / BAP / GLOBALG.A.P. do not apply. If a supplier offers "ASC pollock," treat it as a mislabel.

Q3. Why bias-cut and why a foam tray with film? A. The diagonal (bias) cut widens the exposed surface so thin strips cook in seconds in hot pot. The foam tray + cling-film overwrap (覆膜) gives a retail-ready, portion-controlled pack and protects the fillets from freezer burn. Pieces are IQF'd before tray packing, so they stay separated rather than freezing into one block.

Q4. What HS code applies to frozen Alaska pollock fillets? A. HS 0304.75 — "Frozen fillets of … Alaska Pollock (Theragra chalcogramma)." This is the specific subheading in US, EU, Canadian, Japanese, Indian and Singaporean tariffs. Do not default to the generic 0304.89 ("other frozen fillets"), and note 0304.83 is flatfish, not pollock. If the fillets are breaded/precooked, the code shifts to Chapter 16 (1604.x).

Q5. Skinless and boneless — is that standard? A. Yes. The standard pack is PBO (skinless, boneless). Pinbone-out and tailored strip width/length are available on request; confirm trim specs on the order.
